Cheesy Tex-Mex Beef Enchilada Dip with Seasoned Ground Beef and Melted Cheese

Ingredients:
1 pound ground beef
1 small yellow onion, finely diced
2 cloves garlic, minced
1 can (10 ounces) red enchilada sauce
1 can (10 ounces) diced tomatoes with green chiles, undrained
8 ounces cream cheese, softened
1 cup shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh cilantro
Tortilla chips, for serving
Directions:
Preheat the oven to 375°F (190°C).
Heat a large skillet over medium-high heat. Add the ground beef and cook for 6-8 minutes, breaking it apart with a wooden spoon, until browned and fully cooked.
Drain any excess grease from the skillet.
Add the diced onion and minced garlic. Cook for 2-3 minutes, until the onion is softened and fragrant.
Stir in the chili powder, cumin, smoked paprika, salt, and black pepper.
Add the enchilada sauce and diced tomatoes with green chiles. Stir well and simmer for 3-4 minutes.
Reduce the heat to low and add the softened cream cheese. Stir until completely melted and the mixture is creamy.
Stir in half of the cheddar cheese and half of the Monterey Jack cheese until melted and well combined.
Transfer the mixture to a lightly greased 8-inch baking dish or small casserole dish.
Sprinkle the remaining cheddar and Monterey Jack cheese evenly over the top.
Bake for 15-20 minutes, or until the dip is bubbling around the edges and the cheese is completely melted.
Switch the oven to broil for 1-2 minutes if you want a lightly golden cheese topping, watching carefully to prevent burning.
Remove from the oven and let rest for 5 minutes.
Sprinkle with fresh cilantro and serve warm with tortilla chips.
