This salad we have located and are sharing from the Change You Health For Life, the Facebook page looked so colorful and full of appeal that we wanted to share the post and recipe.
Romaine lettuce, black beans, bell peppers, tomatoes, corn, and onions are a great mix of textures and flavors. The dressing that goes on the salad sounds like a perfect combination of ingredients that will make this a very satisfying meal.
If salads have already been part of your daily diet, you will appreciate this recipe as it has a very nice dressing recipe. For those of you that are new to the world of eating salads, one of the keys to making a salad go from boring to fantastic is the use of great homemade dressings.
Homemade dressings are a better way to go then those dressings you may be accustomed to that are pre-bottled because you have control over the type of oil and other ingredients you use.
Many dressings in bottles are laden with artificial colors or flavors that are not good for you at all.
There are some bottled salad dressings that are natural and safe to eat that are flavored beautifully, so just learn to read all labels before you buy.
When you come across a recipe such as this, be willing to give it a try. Learning to eat the right foods in the right combinations is going to make you feel better. Always remember to take your daily walk as well.
Southwestern Chopped Salad
ingredients:
Large head of Romaine 15 oz.
1 can of black beans, rinsed and drained
1 large orange bell pepper
1-pint cherry tomatoes
2 cups corn (fresh or frozen, thawed)
5 green onions
Optional: avocado
Dressing :
1 cup loosely packed cilantro, stems removed and roughly chopped
1/2 avocado (or 1/2 cup plain vegan yogurt or Greek yogurt)
2 Tbsp. fresh lime juice (about 1/2 lime), more to taste
1-2 garlic cloves
1/4 cup olive oil
1 1/2 tsp. white wine vinegar
1/8 tsp. salt
Instructions :
Making the dressing: puree all ingredients in a food processor/blender until smooth. Taste and adjust seasonings if necessary.
Making the salad: Finely chop romaine, bell pepper, tomatoes, and green onions. Place all ingredients in a large bowl and stir to combine. Toss with desired dressing.
