Moist Cinnamon Walnut Banana Bread Baked in Individual Jars
Banana Bread in a Jar transforms classic homemade banana bread into charming individual servings. Each jar is filled with tender, moist banana bread flavored with warm cinnamon and studded with crunchy walnuts, creating a cozy combination of soft texture and nutty flavor.
Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
1/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
3 ripe bananas, mashed
1/3 cup sour cream
1/2 cup chopped walnuts
Directions:
Preheat the oven to 350°F (175°C). Lightly grease six 8-ounce oven-safe glass jars. Use jars specifically rated for baking; do not use ordinary canning jars unless the manufacturer states they are oven-safe.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
Add the mashed bananas and sour cream and mix until well combined.
Gradually add the dry ingredients to the banana mixture, stirring just until incorporated. Do not overmix.
Fold in the chopped walnuts.
Divide the batter evenly among the prepared jars, filling each jar no more than halfway to allow room for the bread to rise.
Place the jars upright on a sturdy baking sheet, leaving space between them.
Bake for 25-35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Carefully remove the jars from the oven using oven mitts and place them on a heat-safe surface.
Allow the banana bread to cool in the jars for at least 20 minutes before serving.
Serve warm or at room temperature, topped with extra chopped walnuts if desired.
Do not seal the hot jars or attempt to create shelf-stable canned banana bread. Store leftovers covered in the refrigerator.
