Cheesy Beef Burrito Casserole with Seasoned Beef, Refried Beans, and Golden Melted Cheese
This Baked Burrito Casserole is everything you love about burritos in one bubbling, cheesy dish! Seasoned beef, creamy refried beans, tortillas, and plenty of melted cheese make this an easy family dinner everyone will love
Ingredients:
1 pound ground beef
1 small yellow onion, diced
2 cloves garlic, minced
1 packet (1 ounce) taco seasoning
1/2 cup water
1 can (16 ounces) refried beans
1 cup salsa
1 can (10 ounces) red enchilada sauce
8 flour tortillas, 8-inch size
2 cups shredded Mexican-blend cheese
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped fresh cilantro
2 green onions, sliced
1/4 cup sliced black olives, optional
Directions:
Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Heat a large skillet over medium-high heat. Add the ground beef and diced onion and cook for 6-8 minutes, breaking the beef apart as it cooks, until the beef is browned and the onion is tender.
Add the minced garlic and cook for 30 seconds, until fragrant.
Drain any excess grease from the skillet.
Stir in the taco seasoning and water. Simmer for 2-3 minutes, stirring occasionally, until the sauce thickens and coats the beef.
In a medium bowl, stir together the refried beans and salsa until smooth and easy to spread.
Spread about 1/2 cup of the enchilada sauce over the bottom of the prepared baking dish.
Spoon a portion of the refried bean mixture onto each tortilla, then top with seasoned beef and a sprinkle of Mexican-blend cheese.
Roll each tortilla tightly into a burrito and place it seam-side down in the baking dish.
Pour the remaining enchilada sauce evenly over the burritos, making sure most of the tortillas are coated.
Sprinkle the remaining Mexican-blend cheese and cheddar cheese evenly over the top.
Cover the dish loosely with aluminum foil and bake for 20 minutes.
Remove the foil and bake for another 10-15 minutes, until the cheese is completely melted and bubbling around the edges.
If desired, broil for 1-2 minutes at the end for a lightly golden, bubbly cheese topping. Watch carefully so it does not burn.
Let the casserole rest for 5-10 minutes before serving.
Top with sour cream, chopped cilantro, green onions, and black olives if desired.
