Decadent Chocolate Brownie Bars with a Creamy Peanut Butter Filling and Fudge Topping

These Peanut Butter Chocolate Ooey Gooey Bars are an irresistible combination of rich chocolate and creamy peanut butter. A fudgy brownie-style base is topped with a thick, smooth peanut butter layer and finished with a glossy chocolate topping, creating wonderfully rich layers in every bite.

Ingredients:

1 box (18.4 ounces) chocolate fudge brownie mix
1 large egg
1/2 cup unsalted butter, melted
1/2 cup creamy peanut butter

For the Peanut Butter Filling:

1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1 1/2 cups powdered sugar
1 teaspoon vanilla extract
2 tablespoons milk

For the Chocolate Topping:

1 cup semi-sweet chocolate chips
1/2 cup creamy peanut butter
2 tablespoons heavy cream

Directions:

Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
In a large bowl, combine the brownie mix, egg, melted butter, and 1/2 cup peanut butter. Stir until a thick dough forms.
Press the brownie mixture evenly into the bottom of the prepared pan.
Bake for 12-15 minutes. The base should be partially set but not completely baked.
While the base is baking, prepare the peanut butter filling. Beat the softened butter and peanut butter together until smooth and creamy.
Gradually add the powdered sugar, followed by the vanilla extract and milk. Beat until thick, smooth, and spreadable.
Remove the brownie base from the oven and carefully spread the peanut butter filling evenly over the warm surface.
Return the pan to the oven and bake for another 15-18 minutes, until the peanut butter layer is lightly set. Do not overbake.
Allow the bars to cool for about 15 minutes while preparing the topping.
Place the chocolate chips and peanut butter in a microwave-safe bowl. Heat in 20-30 second intervals, stirring between each interval, until smooth and melted.
Stir in the heavy cream until the chocolate topping is glossy and completely smooth.
Spread the chocolate mixture evenly over the peanut butter layer.
Refrigerate the bars for at least 2 hours, or until the chocolate topping is firm enough to slice.
Lift the bars from the pan using the parchment paper and cut into squares with a sharp knife.
Let the bars sit at room temperature for a few minutes before serving for the softest, ooey-gooey texture.
